Chipotle PALE ALE Chili

2 lbs chuck or sirloin, cut into 1 inch cubes 1 lb ground sirloin 1 bottle pale ale or IPA (can be non-alcohol type) BUT alcohol cooks off quickly, leaving nothing but flavor! 1 28 oz can whole tomatoes - add whole and mash in pot 1 16 oz can refried beans 2 chipotle peppers in adobo sauce, can run your knife through them 1st (and remove any stems, or seeds if you wish) 1 tablespoon ground cumin 3 cloves minced garlic Brown all of the meat over high heat so it gets nice and seared. Ground Sirloin 1st then add in the sirloin (your butcher can cube for you if you ask nicely :) saving you time). Put the meat in a pot (like a dutch oven type or cook all in it to begin with) and add the cumin, salt and pepper and stir for a few seconds until fragrant. Add add of the other ingredients, and season with another few pinches of salt and pepper. Let this all simmer over medium low to low heat for at least an hour and a half, after bringing to a bubble, or until reduced to chili consistency. Keep tasting and seasoning with salt, pepper, and more adobo sauce from the chipotles. Enjoy! Amazing the next day too! Great paired with Brown rice too!
